Instructions
Fry diced onion until brown, preferably in an earthenware pot with lard. Then, turn up the heat and add the chicken and the rabbit, previously cut into small pieces, and the pork ribs. After cooking for a few minutes, add the wine and the salt and let it simmer. Finally, add the garlic bulb and some water and then cover the pot and simmer for three quarters of an hour more.
Meanwhile, make the meatballs mixing the meat, the salt, pepper, the egg, the garlic and parsley, finely cut, and the breadcrumbs. Wrap the balls with pieces of tripe and fry them with the mushrooms and some scallions. Once cooked, add to the pot and let it simmer for still 1 hour more.
