Ingredients:
2 pig trotters,
50g of onion,
50g of courgettes,
100g of black pudding,
salt,
pepper,
vinaigrette and
200g of Santa Pau beans

Carpaccio of pig trotters and Santa Pau beans

Serves 4

Instructions
Boil the pig trotters and bone them. Season them with salt and pepper. Fry the onions in a pan and when they are brown, add the courgettes and the black pudding, and let it cook for a while. Season and mix with a food processor. Then, stuff one half of the pig trotters and then cover with the other half and wrap them in film, as if it was a sweet. Put them in the fridge and let them set. When they are ready, take off the wrapping film and slice them. Put the slices on a plate, place the beans in the centre and season all with the vinaigrette.
